Our paring knife is a small, multi-purpose knife.  While it works great in the kitchen alongside a chef knife, it also works great in a sheath on your belt in the field.  We carry paring knives on our outdoor adventures.  They make wonderful EDC and bushcraft knives.  Paring knives are approximately 8 1/2″ overall length with a 4″ blade.  The chef knives are approximately 13 1/2″ overall length with 8 1/2″ blade.  Both knives are 1/8″ thick.  The weight varies depending on handle material used.

When trying to decide what styles of chef knives to make, we settled on the French chef and K-tip chef options because of several close friends in the food-industry.  The handle thickness and shape were also greatly influenced by the input of pros in the industry.  Professional chefs have held and used our kitchen knives, and they love the feel and balance of our kitchen knives.

These knives are all made from 52100 carbon steel metal – NOT stainless.  While we feel the 52100 is a better steel for knives, it does require hand-washing and keeping the blade dry when not in use.  Always dry the knife completely before putting into a block or sheath.  It is normal for this blade to turn gray with time.  Some areas may become darker faster than others due to certain acidic foods (like tomatoes, for example).  This is normal and does not affect the function of the knife or the quality of the food being prepared.

To ensure the longest possible edge retention, we recommend using only wooden cutting boards (- not plastic, glass, or ceramic).  We also recommend, if you use a knife block, store the knife “upside down” that is with the sharp edge facing up so it does not sit on the wood all the time.

We use our French chef and paring knives multiple times every day.     They have lasted for years without any issues.

If you ever want the blade cleaned up and/or sharpened, you can send it to us.  Just pay shipping both directions, and we will clean it up and sharpen it for free.

Osage, rosewood, and purple heart all have some natural water-resistance. If you choose Stabilized wood, MiCarta, or DymaLux, please contact us with details on what color/styles you prefer.
